Cítricos Shrimp with Tomato - Feta Compote

When the Grand Floridian first opened, it was lovely not only appearance, but it also served as “home” for one of the few places on property to enjoy a meal with a culinary focus. Luckily, the trend to achieve excellence with food continued all throughout Disney’s resorts and we now have many options to turn to for a thoughtful and curated dining experience. However, the Grand Floridian still offers some of the very best dining destinations on property with Victoria & Alberts, Narcoossee’s, and Cítricos. All three restaurants have been renovated and revamped from their original versions, yet each restaurant remains a top choice for an elevated dining experience!
Today’s recipe hails from the previous version of what we see on Cítricos menu today and is a bit of a tribute to a culinary team who helped ignite the foodie flame, back in the day!
When I was thinking of which recipe I wanted to showcase next, I wanted to turn to something a bit easier. I feel like sometimes we equate great meals to being things that are more complex and labor intensive. When truly, that is far from true. Sometimes, some of the most delicious things are made with simple and fresh ingredients. FRESH is always the key word, and I find that to be the case with this recipe.
Located in Deliciously Disney, Cítricos Shrimp with Tomato-Feta Compote is a winner for sure! It’s versatile, colorful and it has a flavor profile that appeals to many people. The recipe used to be an appetizer at the restaurant, but I served it over rigatoni, as an entrée. It would be lovely with fresh, crispy bread and equally as tasty over quinoa or farro. Also note, the recipe is for two. I tripled it to make it work for our family! Hoping you enjoy it!!

“When Cítricos debuted at Disney’s Grand Floridian Resort & Spa in 1977, it was a splash of sunshine, a taste of the Mediterranean, and one of the best new restaurants as Disney was beginning a new era in dining. The sautéed shrimp and feta was an authentic taste of Greece , with it’s salty feta, fresh tomatoes, and a generous glug of white wine. But it also was a taste of Florida, where shrimp, my favorite seafood, is harvested year-round in abundance. I think I ordered this appetizer every since time I dined at Cítricos. And then I coaxed the recipe from the chef and have served it dozens of times from my own kitchen, where I can pick the tomatoes and lemon in the backyard.
